GRAPE VARIETIES
Sauvignon Blanc 97% – Semillon 3%.
VINIFICATION
Nocturnal harvest, with selective sorting. Direct pressing. Long fermentation in barrels. Respect for freshness and aromas. Aged 10 months in barrels (1/4 new) on fine lees with moderate stirring.
TASTING
This vintage is superb. Notes of yellow plums, passion fruit, all wrapped in light woody notes, but still carried by a beautiful acidity. A rather full texture that makes you salivate on the finish.
GASTRONOMY
Perfect with Thai dishes, risotto (peas, asparagus, mushrooms), white meats or goat’s cheese.
AGEING
3 to 10 years or more.
