RAISINS
Cabernet Sauvignon 60%, Merlot 25%, Cabernet Franc 15%.
VINIFICATION
Night harvest with selective sorting. Plot selection, pre-fermentation cold and long maceration (18 months). maceration in barrels ( 1/4 new). Alcohol level: 14%
TASTING
aromatic from the undergrowth, slightly woody nose with notes of ripe fruit, like black cherry. Powerful attack on the palate revealing well-blended tannins. Long persistence in the mouth.
GASTRONOMY
Wellington beef, venison in sauce, red meats, cheeses, chocolate, chocolate fondant.

3 to 15 years.
